Matcha Soy Latte

Matcha Crepe Cake Recipe

 

INGREDIENTS 
A. Green tea crepes

  • 3 eggs (medium size, 60 gr/piece including shell) - at room temperature
  • 470 ml (2 cup minus 2 tsp) milk - - at room temperature
  • 40 gr (3 tbsp + 1 tsp) unsalted butter - melted and keep warm 
  • 1/4 tsp vanilla extract 
  • 170 gram (1-1/3 cup) all purpose flour 
  • 10 gram (5 tsp) kitchen grade matcha powder or Classic Matcha
  • 40 gram (1/5 cup minus 1 tsp) caster sugar 

B. Custard cream

  • 3 egg yolks (18 - 20 gram/ yolk) - at room temperature
  • 75 gram (1/3 C) caster sugar 
  • 30 gram (1/4 C) all purpose flour 
  • 300 ml (1-1/4 C) milk - lukewarm 
  • 1/2 tsp vanilla extract 
  • 3 gelatin leaves (6 gram, can be substituted with gelatin powder, same quantity) + 50 ml water to soak gelatin 
  • 300 ml (1-1/4 C) whipping cream (30 - 35% fat) - COLD 
  • 20 gram caster sugar (4 tsp) 

 


Soft and Chewy Matcha Cookies

 

Ingredients:

  • 100g (3.5oz.) unsalted butter *room temperature
  • 50g (1.8oz.) brown sugar
  • 1 egg *room temperature
  • vanilla extract
  • 160g (5.6oz.) all purpose flour<
  • 2 tbsp. kitchen grade matcha powder or Classic Matcha
  • 1/2 tsp. baking powder
  • 40g (1.4oz.) white chocolate bar
  • 40g (1.4oz.) milk chocolate bar

 


Matcha Souffle

 

Ingredients:

For coating ramekins (I use 4-oz ramekins)

  • ½ Tbsp. (7 g) unsalted butter, at room temperature
  • 4 tsp. granulated sugar

For the custard

  • 150 ml milk
  • 100 ml heavy whipping cream (double cream)
  • 3 large yolks
  • 22 g (2 Tbsp./ 0.8 oz) granulated sugar
  • 25 g (2 Tbsp. + 2 tsp./0.9 oz) all-purpose flour
  • 1-2 Tbsp. Culinary or Classic grade Matcha (1 Tbsp. matcha = 6 g, 0.2 oz)

For the meringue

  • 3 egg whites
  • 44g (4 Tbsp/1.6 oz) granulated sugar

For dusting

  • 1 Tbsp. powder (icing) sugar

 


Matcha Mushipan

 

Ingredients:

  • 100g Cake Flour (3.5 oz)
  • 2 tsp Culinary or Classic Grade Matcha
  • 1 tsp Baking Powder
  • A pinch of Salt
  • 60g Sugar (2.1 oz)
  • 1 Egg
  • 80ml Milk or substitute: soy milk or water (2.7 fl oz)
  • 60g Amanatto, a type of candied beans (soft type) (2.1 oz)
  • Amanatto for topping (soft type)
  • 6 Ramekins, 5cm/2” diameter
  • 6 Cupcake Liners

 


Matcha Swiss Roll

 

Ingredients:

  • 4 Egg Whites
  • 40g Sugar (1.4 oz)
  • 4 Egg Yolks
  • 40g Sugar (1.4 oz)
  • 40g Cake Flour (1.4 oz)
  • 1 tbsp Culinary or Classic Grade Matcha
  • 120ml Whipping Cream with 35% fat (4 fl oz)
  • 1 tbsp Sugar for whipped cream
  • 120g Anko - Sweet Bean Paste (4.2 oz)
  • 80g Sweetened Azuki Beans (2.8 oz)
  • Powdered Sugar
  • Baking Sheet: 26x36cm/10¼x14¼ in
  • Thin Kraft or Bakery Paper

 


Matcha Soy Milk Shake

 

Ingredients:

  • 100ml Plain Soy Milk or regular milk (3.4 fl oz)
  • ¼ tsp Vanilla Extract
  • 50g Ripe Banana (1.8 oz)
  • ½ tbsp Syrup or Honey
  • 1 tsp Culinary or Classic Grade Matcha
  • 2 tsp Hot Water
  • 3 Ice Cubes
  • 1 scoop of Matcha or Vanilla Ice Cream
